Pistachio-Fruit Biscotti

So for our two month-iversary, Mike and I decided we wanted to start a cute tradition. While we were in the store, we saw a magazine boasting the "100 Best Cookies." After looking through a few dozen of the cookies, we decided we wanted to make them. A different cookie every week and a blog post to tell you all about it. Here is our first entry. Enjoy!

I just want to start off by saying, I expected these to be the worst in the book. We picked them at random and this was our first time doing this. I was expecting to pick a sweet cookie, but for a savory cookie, this was not that bad. Definitely a good one for the holiday season. This cookie has a nutty flavor which contributes to the savory flavor. The fruit brings a nice, bright look to the treat and gives you the break from the savory to something sweet. Cooking these cookies will take a bit longer than you would expect, but it is worth it.

Our Advice: Feel free to use any dried fruits you want, but be careful of how moist they are. We chose blueberries and they were really wet. This made our cooking times about 10 minutes longer.
