Linzer Pinwheels

We tried Linzer Thumbprints that one time and they were not our favorite to say the least. So needless to say when we say Linzer Pinwheels, we got a little nervous. Here are the scores.

They look gorgeous, if you can do them right ;), and they don't taste as bad as I expected. Quite the opposite. I think I actually like these cookies. A nice savory jam within a sugar cookie. This cookie is a nice holiday cookie. Happy Thanksgiving!

Our Advice: There are a few pieces of advice we have for you with this cookie. First is the way you roll them so they come out as round cookies (instead of the biscotti shaped ones we had last week). Here's what you do. Roll the dough up in a log and then chill it inside a paper towel roll. You'll have to cut it open before you can put the log in there, but once you do, wrap it in plastic wrap and you're golden. The other piece of advice is to be careful when you are taking them out of the oven and putting them on the cooling rack. The jam will stick to the parchment paper and will refuse to come off if it has cooled too long. We lost about a tray of cookies this way. So be careful and good luck!
