Coconut-Blueberry Cheesecake Bars
We had a nice break from the "savory" cookies last week. That run was short-lived. Because what better way to celebrate second Thanksgiving than through blueberry cheesecake? Here are the scores!

Definitely not what I would consider a cookie, but overall, they weren't all that bad. We may not have cooked ours as long as we should have, and that made it gelatin-y on the top. Either way, this is a great way to learn how to make cheesecake. In addition, this is a great recipe to play around with. Don't like blueberries? Try a different fruit! Don't want coconut in the crust? feel free to cut it out.
Our Advice: Cook the cheesecake a little longer than you think you should. Our recipe said to take it out of the oven when the center seemed set. To us, it did seem set, but after cooling it, it is still a little gooey. It's still good, but just be aware.
