Boureki

a traditional dish of crete, boureki consists of zucchini and potato baked with soft white cheese called mizithra

i had prepared this in the summer when the zucchini were at thier best, and cooked it this evening in our wood-fired oven which you can see here

it's very tempting to peel off the crusty top, but i have refrained from doing so, by brushing my teeth before i go to bed, just to make sure i won't peel off the best bit

this constitutes tomorrow's lunch - i usually cook the next day's meal on the previous evening
