Baked Cottage Cheese Cake
carton of cottage cheese (500g)
wheatgerm (about 1/2 a cup)
grated fresh lemon rind
honey as liked
2 egg yolks
...and mix those ingredients with a nice big spoon.
Fold in 2 egg whites beaten until stiff
Pour mix into a greased pie dish sprinkled liberally with wheat germ. Sprinkle top liberally with wheat germ
Bake in a low to moderate oven until golden or about 40minutes-1 hour
Serve with plain yoghurt or sour cream as liked. Inventive home cooks with access to best quality plump raisins might like to add some to the mix before baking.
