Trout for 40
Crystal clear streams high in the mountains of Oaxaca provide crisp cold water perfect for raising trout. The trout farms are small family-run businesses (like almost all businesses here), and nearby restaurants prepare the fish in various and delicious ways.
The Friday hike began at this restaurant, where we placed our orders, and while we were hiking and working up our appetites, the women prepared the trout and the man chilled the beer!
I can promise you that the fish are fresh, as we saw one girl cleaning a fish as she headed toward the kitchen, throwing the guts aside as she went! We all laughed and savored every bite.
