Cappelletti...little hats

Cappelletti: an Italian tortellini-like dish handed down for generations and continued yearly at my Italian Mom-in-law's home. We begin in November, we make approximately 1300 of the little guys over the course of 3 Saturdays. The matriarch, Vera (Nonnie) Betori, who handed down our Cappelletti experience, died a few years ago, and now the 3 generations left to carry on, do just that.
It is a time of laughter and memories and making fun of the younger ones as they learn the fine art of rolling out the pasta.

On Christmas day, we have the Lipti's (as we have nicknamed them) in chicken broth, and on New Year's Day, we enjoy them in homemade marinara sauce.

Thank you Nonnie for this blessed tradition. We take off our "little hat" to you!
