Spinach omelette

after making some spanakopita (spinach pie), both for eating now and for freezing later, i had some mixture left over

it's a common problem in making pies in bulk - either you run out of pastry with filling left over, or vice versa

so i made this lovely spinach omelette with the leftover filling - it went well with the greek rose wine from the averof winery and the cornbread (bobota) from venetis bakery
