Pumpkin Bars

What a nice way to spend a day off: with the boyfriend and canned pumpkin. Here are the scores:

Not quite a cookie, but not as gross as I expected. Mike is in love with pumpkin things, so obviously he enjoyed it, but I found the frosting a bit too rich. A nice treat if you are looking for something to make for a Thanksgiving Day dessert.

Our Advice: The recipe, if followed correctly, does not actually yield a spreadable frosting. It may require some extra liquid. Be careful in what you add here. We used cream, but that may have been a mistake because it made the frosting too creamy. Try adding milk and water until the correct consistency is reached.
