Baklava has a Language!
Indulgent...so very indulgent!
I've had my head buried in a great book ever since I purchased it at the school book fair for the princely sum of 15dhs...less than three pounds!
It's a memoir cum recipe book written by an American born Jordanian who's father was obsessed with cooking, in an effort to recall the place of his birth whilst residing as an immigrant in a foreign land far from his ancestral bedouin tent pitched under a star studded sky in the vast desert of Wadi Rum. (phew!)
Written with vibrancy and humour....and descriptions of food that make you want to climb into their world and feast alongside them, its been hard to put down! When you have something this good.....you need to share.....so...
Here's the recipe for....
"Start the Party Hummus"
1 can of chickpeas (15ozs)
2 tablespoons of olive oil
juice of 2 lemons
3 cloves of garlic
1/4 cup of tahini
1/2 teaspoon paprika
salt to taste
Puree all the ingredients to a thick, creamy consistency.
Adjust texture by adding small amounts of water.
Serve in a wide flat bowl with a streak of olive oil on top along with a warm basket of pitta bread for dipping.
Black olives, tomatoes or radishes also make a nice dippable garnish.
