Counting calories
Hi everyone: Since I've been asked from many friends for the recipe I thought I'd do it this way. A few weeks ago I started the 2:5 diet and so far I'm down 12 pounds. I have to admit I'm getting tired or counting my calories . I decided to make myself some ready meals so on my fasting days I won't have to think to much. So here you go:
Cabbage soup. This made 31 portions.
Leaks (chopped) 300g...75 cal
4 bay leafs
Ground pepper 1tsp
Broccoli chopped in large pieces) 250g...87cal
Celery(chopped) 285g...48 cal
Cauliflower (chopped )285g...93cal
Cabbage (large chunks)1600g...400cal
Carrots(chopped) 400g...164cal
Peas (can) 280g...260cal
Chick peas(can) 260g....300cal
Red kidney beans(can) 255g....266cal
White beans(can) 250g...280cal
Green beans(can)440g...112cal
Fresh spinach 450g...104 cal
5 knorr chicken cubes 50 cal
I can crushed tomatoes 100 cal
Put all fresh vegetables and can of tomatoes in a large pot and add 6 liters of water.
Cook for a half hour or until vegetables are tender. Add cubes and all canned veggies and spinach and cook for another 15 minutes. Adjust to taste.
I strained the broth out and separated the veggies into the containers. I weighed them to be approximately 150 g. Once I had the veggies divided up I added the broth back. I'd approximate the calories to be between 70 and 80 calories .
Chicken Chili..made 11 servings
16 ounces boiled chicken breast. ( shredded)
Leaks (chopped) 150 g...37cal
2 cans of mushrooms 680 g...58 cal
Red and yellow pepper (chopped) 300g ..100 cal
1 can white beans 250 g..280 cal
2 can red kidney beans 255 g...532 cal
2 cans diced tomatoes 400 g..352 cal..
I jar of purée tomatoes 700 g..260 cal
Tex mex spices..or chili powder.
First boil the chicken until cooked ..maybe 20 minutes. Let cool and shred. I used 4 chicken breast but the weight was 16 ounces after cooked. Set aside
I did not use any oil to cook this dish and it tastes great...so trust me on the next step.
Place leaks in pot with some water and cook until softened..you may have to add water if it starts to stick to pan..the goal is to get them a little golden than add peppers and do the same. Add them to your chicken than cook mushrooms. Again add a little water and let cook for a few minutes. You are not boiling them just sautéing them in their own juices. After they cook a little add the cans and jar of tomatoes. Add chicken and veggies back to pot and add a tablespoon of your favorite chili spice. Cook for 10 minutes than add the beans..taste and add spice as needed..I added a few drones of hot sauce but it's up to you. Cook for another 15 minutes..that's it..this one is easier and faster to make. Good luck.
