Zucchini and potato tart

So every once and awhile I'm craving my mom's food. To lower the calories I lower the amount of oil I used. I could just hear her now " but you need a little bit of oil for the taste!" Haha..a little bit is not so little. This tart is so simple and has a taste you won't believe and at 271 calories coupled with a salad is perfect for a non fasting day.

Here you go..

750 g baking potatoes sliced thinly....578 cal
685 g zucchini sliced thinly. .............120 cal
300 g onions diced thinly...................120 cal
50 g bread crumbs .............................200 cal
80 g Parmesan cheese grated.............312 cal
4 tbsp olive oil.....................................480 cal
Tomato purée .....................................360 cal
Salt and pepper..............,.,,,,,...............0
Total cals...2170
4 container aluminum
Serving size 1/2 countainer...271 cal

Start by layering 2 tbsp tomato on the bottom of baking dish
Follow with a layer of potatoes
Sprinkle Onions
Sprinkle Bread crumbs
Sprinkle Cheese
1tsp olive oil NOT tbsp
Layer Zucchini
2 tbsp tomato
Sprinkle onion
Sprinkle bread crumbs
Sprinkle cheese
Salt and pepper
Potato
Tomato
You got the idea
And just continue in this fashion until all ingredients are used..
You should finish with tomato ..bread crumbs ..cheese and 1 tsp olive oil as it will give it crunch and as my mother says " a nice taste!" Hope you like it!
