Caramel shortbread

My mum used to make the best caramel shortbread and keep it in a tray in the fridge. My brothers and I LOVED it and it never lasted more than a day or two. It appears that Jacob loves it too.
We walked along to sues this morning for a cup of tea, then Arabella and I had a cuddle and snooze together in bed this afternoon.
