Sausage rolls

I have tomorrow and Friday off of work, after 7 days of working including today. My Mum is visiting tomorrow so I have made some sausage rolls for our lunch- these are puff pastry ones stuffed with free-range sausagemeat mixed with chopped apricots and almonds, which should give them a lovely flavour. The one on the far right fell apart during cooking as I made the pastry sheet a little too short so there wasn't enough overlap to seal it shut. Never mind, who cares, it'll taste just like all the others and Mum can have the neat ones! :-)

I can't wait to see her and spend the day together. I think these will go down a treat! Here they are cooling down before I boxed them up for tomorrow. I find baking/cooking is nicely therapeutic, when it all goes to plan that is!!
