Pasta & Chorizo

One of our 'staple' meals that we have for dinner at least every fortnight is what call simply 'Chorizo Pasta'. I love it. Here's the method:

Roast the following with some olive oil at 200dgs for 25mins:
1 red onion
1 sweet pointed red pepper
10-15 cherry tomatoes
4 cloves of garlic (chopped)

After 15mins, boil the pasta and fry half a chopped chorizo.
When they are done, drain the pasta and put it back into the pan, add the chorizo and the roasted veg. Then stir it all together.

Serve with plenty of parmesan and black pepper.
