Amaranth
I bought a bunch of these leaves from one of my favorite vendors at the farmer's market this morning. They called it 'Chinese spinach' but thanks to Google I was able to identify it as amaranth greens. So beautiful and fresh... in a few few minutes I will stir-fry it with some crushed garlic and enjoy it along side a grass-fed ground beef patty (no hamburger bun for the adults, just the beef, amaranth and a brown rice/lentil pilaf). The kids will have the same beef served hamburger-style, with a side of tater tots :).
