This is the cake that almost didn't happen.

Being familiar with Mary Berry's all in one Victoria sponge method and being in something of a hurry I didn't exactly study the recipe. Which wouldn't have been a problem had I not forgotten to line the cake tin. It turns out it takes more than a non-stick pan, grease and gravity to get a cake out in one piece!

Buttercream icing works wonders, however and so all was just about salvaged. I'll also admit that the shimmery evening sunlight shows the cake's better side! However, the lovely birthday girl seemed happy and that's all that really matters, right? :)
