It is extraordinary the lengths to which bureaucracy extends into everything we seek to do as a small business. As we sought to complete the process of occupying our small warehouse facility for our off-site roasting and as we eagerly await the delivery of our brand new Giesen Roaster, we discover that the state of Texas requires us to pay several hundred dollars for the privilege. So, we are now officially certified Food Manufacturers in Texas! Here is the proof in a rather basic photo, but it is the difference between roasting and dreaming about it instead!
