Today's Blip is the business end of our flat-out favorite restaurant in Boston, Myers & Chang, Blipped here before. The fare is what they call "Dim Sum... and then some" When we had finished our delicious dinner I strolled over to the section behind the bar where all the stir frying gets done. These guys and gals work like slaves in tremendous heat and still bring great artistry to their labor, loading up several woks at a time, flipping the contents with deft wrist movements and passing them off to the wait staff lining up to deliver orders. It's quite a ballet to watch. Occasionally there's a huge flare-up from the gas flames, and I waited for that to happen - not quite as dramatic as I wanted, however. Again, without A/F, this shot would have been a challenge.
