Chewy ginger cookie anyone?

I've never made these before - not exactly being a domestic goddess - but they are ridiculously simple and take about 20 minutes to whip up. Or they would, if I hadn't knocked the oven temperature from gas 4 down to 1. I noticed eventually...

Anyway, after extensive taste testing (well it's my first batch and I couldn't in all good conscience inflict them on my colleagues on Monday without at least trying them first) I declare these cookies pretty damn good!

Now, I must put them in the car so there's some left on Monday morning...
