Saltmarsh lamb to be ...

Farmers graze sheep on the salt marshes on the edge of Morecambe Bay. The lamb gains a fine flavour from the grass which the sheep eat and can later be bought in local butchers at a premium price. Although these sheep are most likely the mothers of the lambs which will be next year's saltmarsh lamb, you get my drift.
