Learning off the job...
I learnt 90% of my cooking repertoire and tricks from when I worked in an italian open kitchen restaurant.
Tonight it is Daddy Pasta...
Fill a pan with cold water and dry pasta, put on hob to boil.
Slice up some bacon and cook in frying pan on a low heat with a little olive oil and white wine if available for about 2 minutes so as it is still moist with juices.
Add enough Elmlea Double (a cream substitute that tastes the same as double cream but is half the price and has a infinitely longer shelf life) to mostly cover the bacon, bring to boil whilst stirring.
By the time the bacon and cream is ready, the pasta should be just about right, drain the past, add to the frying pan, mix and serve.
