Dinner on the Deck

Another fine day on the PNW with our friends. Lots of talk, help hoisting the new mattress to the studio loft, a walk and some broom pulling (we finally found someone who LIKES to pull scots broom —it’s making a difference!) And the food continues… I actually made swedish pancakes for brunch (I’ve made millions of these for grandkids and today I forgot to put the butter in til halfway through—a bad sign.) I also made a peach pie and guacamole. About my limit. We sat on the deck with the cozy little fire and kept bringing out little bits of leftover and this and hat -tapas- on a very calm pleasant night. We will all leave tomorrow -R and D to Saltspring for a wedding in the am, and H and I back to Seattle later on…

I promised a couple of recipes so here they are… from memory —If you would like it more exact I can send later. :-) This tomato pie is great with all the end of summer tomatoes that gardeners seem to have right now., enjoy!

Tomato Pie
use a ready made deep dish crust, poke holes in bottom. bake at 400F for 7 min. (or make one)
Slice, squeeze and drain about 9-10 tomatoes (so most ALL the liquid is gone)
Layer tomatoes, basil, green onions, (white, lt. green and some of the dark green) and dill in with tomatoes in the crust.
top with 1 3/4 cup shredded sharp cheddar cheese mixed with 1/2 cup real mayonaise. so it covers about 3/4 of top (not on edge because it will drip down)
Bake it at 400 degrees until cheese is melted and toasty brown - 20 minutes?

Cheese/Olive puffs
In cuisinart mix 2 cups cheddar cheese, 1/2 cup butter, 1 cup all purpose flour, a pinch of paprika (or can use a dash or worcester sauce) . Knead the dough, divide into 24 small balls, flatten and wrap around a pitted (or stuffed) olive. put on lightly oiled baking sheet.
Bake for 15 minutes at 400 F. until lightly browned…

Tired. Will catch up later...and do the dishes in the morning!
