So I had a very successful brewing session tonight. A lot of work but everything went swimmingly. The specific gravity (i.e. how much denser than water) of the wort (the malt and sugar laden liquid that the yeasties get to feed on) was 1.080 which is perfect. If the yeasties are healthy and plentiful and there's enough oxygen in the wort then fermentation should complete fully and end up with a 8 or 9 percent (by volume) beer. Only time will tell....

BTW, this is a 6 gallon bucket holding just over 5 gallons of wort.

[update: after 2 hours there are some bubbles coming out of the airlock. A very good sign. I'm hoping in the morning there's going to be major bubbling going on.]
