A new belief, formulated by @iamamro and @scharwenka, is that enough cinnamon offsets the dangers of sugar. Our musical colleagues will doubtless compose the tune for the well known lyric "Slim with Cinnamon".

The cross is omitted not because of religious scruples, but because it doesn't taste different. Other religious scruples did not prevent us using yeast during Pesach, and the yeast most surely does make a difference!
