Living the dream they made come true
I met these guys through our common love of local live music. Landon (left) was a (talented and inventive) chef. Tim has a teaching degree, but has chosen to wait on tables at good places because he enjoys it. For the past couple of years, the two have been intent upon opening a place of their own with Landon handling the menu and kitchen, and Tim handling the hosptitality.
In spite of the terrible economy, the guys relentlessly pursued their dream. On May 4, the dream came true with the opening of HAUTEDISH, "a unique culinary concept that both embraces and reinvents classic Midwestern cuisine." I urge you to check out their menu at haute-dish.com (don't forget the hyphen). On HauteDish's first Friday, a friend and I sampled the fare, and it was spectacular! Who would have guessed that a Midwestern mom-food classic like Creamed Peas on Toast could be translated into a religious experience?
Anyhow, I'm really proud of Landon and Tim, and I thought this iPhone shot captured their inner pride and happiness along with the physical poopedness implicit in having finally made their dream come true.
