Welshcakes
Today's the day .................... that friends are coming for tea
So made some welshcakes to have. My lovely welsh mother-in-law who was a wonderful cook gave me the recipe many years ago and it never fails. She was a busy farmer's wife and would have made a batch of them before anyone else was up........
Ingredients (makes about 20)
8 oz self raising flour
4 oz margarine
3 oz caster sugar
1 egg (+ little bit of milk if necessary)
handful of dried fruit
Method
Rub fat into flour until like breadcrumbs. Stir in sugar and dried fruit. Bind together with egg into a soft dough. Roll out like pastry and cut out round shapes with a cutter.
Heat up a thick-based frying pan or a griddle and lightly grease. Cook in batches of six, first on one side till they rise and then on the other. Remove to a cooling rack and sprinkle with caster sugar.
