Best soup everrrrr!

It's been a while since I've followed my New Year's Resolution of making one recipe from a cookbook every week, so here's my attempt to revive it.

Made the Pumpkin Rice Laksa Soup from Jamie's Dinners.

Have you ever tried working with an acorn squash? I love the way they look, and I love squash, but wasn't quite sure what to do with it. So I had to look up how to peel it, and it is a labor of love, let me tell you. Next time i may opt to use a different type of squash in the soup.

It was amaaaazing beyond words. One thing, do NOT use brown basmati rice, unless you're prepared to wait 2 hours for the damn stuff to cook. We didn't eat dinner until 10pm! But it was well worth the wait.

How do you prepare acorn squash???
