Karen's Birchers - my good start to New Years Eve
Bircher's Muesli can be made a variety of ways - here is my favourite (Dave's too). We had it this morning and then went to Taylor's Mistake for a walk. Dave had a swim.
Base: Before you go to bed place rolled oats and milk in the fridge to soak overnight. As a guide use ½ cup oats per person and slightly less than ½ cup milk per person. The oats will absorb the milk.
In the morning, grate an apple (with skin) probably ½ apple per person but if just for one person, one apple is still good. Add to oats. I use the big coarse setting on my grater for nice texture. Then add yoghurt until a nice sloppiness is achieved (but not runny - maybe 2 Tbsp per person). If using natural yoghurt you can add a dash of honey.
Goodies: Add whatever nuts and fruit you have/want. My fav as shown in the photo is banana, berries and slivered almonds. Other options might be any fresh, frozen or canned fruit. Coconut or toasted coconut is nice. Also walnuts. For a man give them their daily brazil nut requirements by chopping and putting straight into their bowl. If you like dried fruits, soak them overnight in orange juice and add those.
If you are non-dairy you can use juice to soak the oats or soy products.
You can either mix everything all up and serve or, as I prefer layer the base on the plate with the fruit cos this way you can customise to suit each family member. Yum!
