Comfort food
We had friends round for lunch yesterday so didn't want a big Sunday lunch today. In fact Sunday lunches are almost non-existent in this house because of disparate sporting commitments. I find a good way of using up odds and ends in the fridge is a Spanish Omelette or a Rostti of some sort.
This is the latter - a sort of bacony/hamy/oniony/peppery/cheesy/potatoey/eggy mixture with my special sauce - ketchup, mustard and Lee&Perrins (loads of it). Finished off under the grill to make the cheese bubble. Served up with baked beans - AWESOME.
The particularly significant thing about this today is - Hugo ate two helpings. It seems like only yesterday that he was being bandaged from head to toe every night because of his exczema. He was registered disabled because of his allergies to dairy products, nuts, grass - you name it. The EpiPen was permanently nearby!
He was tested a couple of years ago and found he had become clear of just about everything. He could eat chocolate for the first time in his life. Now he has had Spanish Omelette.
The strange thing is - whenever I cook this I get this song in my head.
