Itza Pizza Pie!

My first attempt baking this from scratch and it was scrumptious! Simple recipe, really. First, lightly sprinkle corn meal on to surface before pressing your dough firmly into your largest cast iron skillet (go up the sides). Then sprinkle shredded mozzarella to cover dough completely. Press firmly, making sure the corners are well defined. Then, and this is my favorite part, sandwich a pound of Italian sausage (turkey sausage is a healthier choice) between two sheets of plastic wrap in a circular disk the same diameter as the skillet. Remove top layer of plastic wrap. Flip sausage over on top of cheese layer (obviously, remove the other sheet of plastic wrap). Add any other toppings desired. Top with 15oz diced tomatoes and seasonings. Drizzle crust with olive oil. Bake at 400F for 45 minutes or so. When it comes out of the oven, use all your willpower to wait 5-10 minutes to let it settle.

I now make this weekly, and for all dinner guests.
