Choice pizza

For lunch today we fancied pizza . . . not quite straight from the shop, but home cooked.
We haven’t enjoyed the delight of pizza for some years. Not since the time we discovered that it was taboo in my wife’s diet. And though I have made pizza before, many years ago, this was my first attempt at the gluten free variety.
My wife despairs at many of the gluten free items on the supermarket shelves, and I must admit that my past attempts to make gluten free bread have been far from successful.  Mind you we did buy a gluten free loaf on one occasion on special order from a pharmacy in France which turned out to be suitable for no other use than a doorstop, it was that solid.  Not even my attempts at baking gluten free bread have been that bad.
We are encouraged to see that more supermarkets here are now stocking gluten free products, and the choice is widening. Yet at most stores, the allergy free segment is confined  to just a small section of the shelves.
Nevertheless, she has now found one brand of bread, she reckons is far superior to those she has tried before, and she says, is at least enjoyable as toast.
But the pizza is another triumph.  We bought the base ready-made, but the remainder of it was down to me.  Success.

Not quite as good as pizza we have eaten in Italy many years ago, but very acceptable.  Triumph for me!
