Εxtra Virgin Olive Oil

All the sacks with the olives we'd harvested earlier this week waited here their turn for being processed to olive oil... and it rained when we got there, but the oil produced turned out to be perfect! 0.6 acidity and thus Extra Virgin every 5 kilo's of olives picked produces 1 kilo of olive oil... another nice percentage!
We haven't picked all the olives yet from my sweetheart's fields as he has another field elsewhere, not on a hilly slope tho' and that must be helpfull. We won't manage the reaping of those olives immediately, but they can be harvested till the end of January and by then it's done for sure. This olive oil score of today is wonderfull!!
