Sludge

This sludge is what you get when you crush a bucket full of apples. After a couple of evenings of hard work we have 25 litres of freshly pressed apple juice in a fermenter, ready to become cider.
Interestingly, commercial cider only has to contain 35% apple juice. The rest can be anything and is typically glucose syrup. Some ‘craft’ ciders are 100% apple juice, but many of the mainstream products are apparently not.
