Katchapuri

It was Sasha’s last day with us before she returns to Newcastle for two more years of medical school so I made katchapuri. As the sunguli cheese that’s used in Georgia is not available her, I had to improvise - a mix of grated halloumi, feta and mozzarella with some Greek yoghurt, lemon zest, thyme and zatar worked quite well.

I also heard that after a monumental effort to get a group of female judges from safe houses and through complicated routes to avoid Taliban checkpoints to the airport in Kabul, they were unable to get out at the last moment due to the poor security and drone strikes. Their future as judges who sentenced Taliban fighters is very uncertain. A friend told me - they are not afraid to die, it’s the manner of their death that scares them.
