Flat Eric

My sourdough starter has lost its oomph. I started the loaf three days ago, the first stage seemed OK, the second was slow but again seemed OK but then the second prove just didn’t happen. I baked it anyway this evening though and the result is a very tasty, very flat loaf!
Watching Chernobyl: The Lost Tapes just now. Scary, unbelievable, watch it if you can.
