'Boilt Peanuts'
'Boilt Peanuts' or Boiled Peanuts as Other than Southern Folk are apt to call them, are a Southeastern U.S. delicacy. 'Green' or just harvested peanuts are slowly boiled for several hours in a large pot of water, salt, and sometimes stronger spices like Cajun or garlic are added to 'kick it up a notch'. We cook ours in a pressure cooker.
During this time of the year these delicious legumes are sold at roadside stands...you just lay the bag on the dash of your car and the heat of the summer sun keeps them nice and warm, which is how most of us like to eat them.
When we boil peanuts we cook up a big 'mess' of them to share with friends and neighbors. I don't know of too many people who would turn down 'Boilt' Peanuts to go with their favorite beverage!
