Place: St Pete Beach, FL 65/73
Main activity: Mon - Christmas day, cooking at Bette's
Notes: Woke to drizzling rain around 720a. Was going to walk CiCi but all quiet so put on sweats and headed to Nancy's to get the butternut squash, small mason jar & some cayenne. Mostly quiet roads and lovely gray rain - sat and chatted over there for awhile and then headed back. Set up the InstantPot and took awhile but did the water test for pressure cooking. Was after 10a then and finally got carrots & onions in bottom and put the whole chicken in (after debating whether to roast in oven) Several hours later, still had a ways to go so switched the slow cooker option to only 10 min pressure cooking which mostly did it. Had the oven going to roast Japanese sweet potatoes and butternut squash cubes. Toasted some pecans and dinner rolls at the end. Chicken turned out pretty good and stayed juicy, added arugula salad w/ pears (so good!), pecans and pomegranate seeds. Watched the KC game early afternoon - they lost to the Raiders. Rain stopped and kind of warm/humid but stayed gray (thank goodness!). Ended up being a nice meal on a day that didn't really feel like a holiday, espec Christmas. Walked CiCi mid-afternoon, took a shower early evening which felt a lot better. Deciding when to return to Largo(land) and have no desire to do so - feels pretty empty and overwhelming, all at the same time. Joe has texted a few times yesterday and today. Football games weren't great, tired early.
