My sister and her husband are staying with us for a few days next week and I've been thinking about what food to serve while they are here. I had an idea for a starter which can be prepared in advance but although there's not a lot of actual work involved it takes time because you have to start by making a clear tomato essence, which you do by straining chopped tomatoes and some aromatics through muslin for about 24 hours. The amount of chopping involved just about qualifies this for Silly Saturday but if it works it's very tasty!
