In the pink
I awoke this morning, back home, to see a lovely sunrise over our neighbours’ houses. I felt so much better than in recent weeks - and realised how tired I had become fighting the infection.
A shower, some (medical) correspondence, a shop then I set to baking a lemon sponge for my wife’s birthday today.
Got them out the oven in time for us to head down the coast to Archerfield for lunch. A trip out and making use of some tokens we had kindly been given.
It was really enjoyable - and filling - especially as we each had the home made Cullen skink to start.
A bit of a shop and then a trip to North Berwick. We were too early for the Christmas lights to go one but at the beach we did see the setting sun lightening the Bass Rock.
Popped in to friends on the way back then a snooze for some as I finished the cake. See extra. It was 4 layers with a marscapone cheese filling. It was a Mary Berry recipe which made use of a pulped boiled lemon in the sponge mix which gave it a sharper - but very lemony - taste.
A brief bit of TV before our daughter dropped off their dog on their way to Dundee for the weekend. So the evening was rounded off with a dog walk.
Despite the busy day I feel in very good form but I suppose I should pedal back a bit tomorrow!,
