Caramel Apple Cookies
I just want to start off by saying the way we have been picking these cookies has been completely random. Mike got a random number generator on his phone and we used that the first two weeks. And looking back at the last two choices, they have been bad... SO this week, we have to make two types of cookies for the Thanksgiving Dinner we are having tomorrow. So I told Mike I would use a different random number generator. These cookies were a hell of a lot better than any he had picked. Haha. Now, Let's get to the scores!

This cookie is very light and soft. While it is overall sweet, it does have a savory element to it with the shredded apple in the batter. The nutty mix on top is a nice touch as well. Be sure to toast the pecans, though. It really brings out a nicer flavor. All we can say is that we are glad we got to make a nice sweet cookie (and one that fit in so well to the Thanksgiving theme) with this pick.
Our Advice: Keep the frosting on the smoother side. It is really difficult to work with when it dries out, and it dries out rather quickly. Be sure you have plenty of apple juice on hand. Be mindful of your ratios though! Adding too much of the apple juice without any sugar will possibly make it a bit stronger than you would like.
