Banana Fritter - Naturally Gluten Free
A friend published a recipe for banana pancakes on Facebook yesterday. Take one ripe banana, blend well with two eggs, and fry the batter as small pancakes. It works! I had a very ripe banana and decided to give it a go this morning. This pancake was a bigger size, as I hadn't realised just how much batter the recipe makes.
The fritters are light and naturally sweet. It's up to your taste buds as to whether to add sugar or syrup once they're cooked.
This will become a staple item for me at breakfast. A huge bonus for coeliacs that they are naturally gluten free.
