parmesan crisps...

...are an easy snack

just the thing - if you'd like a quick fix for something salty - yet a tad sweet - yes, i know - from cheese! plus they are the most easy, peasy things on earth to make...

simply grate 4 ounces of good parmesan cheese into a bowl; add in a smidge salt and coarse ground pepper, along with a 1/4 teaspoon of fresh thyme finely chopped; stir in 1 tablespoon flour... then on a parchment lined baking sheet, drop 3" mounds of the cheese batter (i use a pastry mold to help me form them)... bake in a preheated 350 degree oven for 8- 10 minutes until golden brown... you'll want to use a metal spatula to remove from the pan and cool them on a wire rack...

they are - oh, so yummy - hit the spot if you have a slight craving and believe me - friends will think you've bought them at the local gourmet shop - they would go well with a pasta meal - perhaps with chicken, too - or simply as a snack - the best thing - they can sit on the counter for a couple of days with no problem - if they'll last in your house that long - now that's what makes for...
