Between fen and mountains

Makroud is a North African pastry eaten in Algeria, Tunisia and in some parts of Libya. The dough is made mainly of semolina, not flour, which gives the pastry a very specific texture and flavour. Makroudh are often filled with dates or almonds. These ones were inspired by a friend who has just got married after nearly twenty years with her man. Over a period, she made and froze 1500 for her wedding. The guests all got a plateful and so did we all at badminton on Tuesday's club night! I decided to give them a go having found a recipe on the internet. Mine were stuffed with date paste, fried and soaked in honey. Not recommended for anyone on a diet!
