Mmmmm Christmas cake
Well we survived the night, and it was pretty intense - torrential rain and high winds. Now the winds have eased but there's heavy rain and I really need to go to Bantry, not sure if this is a good idea as Bantry is very prone to flooding.
Not much to relate today except the Christmas cake is now in the oven and will be for at least four hours! For those of you interested in this kind of thing, I use a very old Delia Smith recipe as my basis but customise and improvise by adding lots of figs, dates, apricots, prunes and a tin of pineapple chunks!! Also copious amounts of Guinness! The cake will then be wrapped up and fed a weekly dose of more Guinness until Christmas Eve when it is traditionally iced by son number 2 and my brother. It is usually pretty historic!
This is the fruit all nicely soaked overnight :)
