so yummy... sweet - you can simply pop 'em in your mouth for a quick snack... with a firm texture, they don't squirt all over the place - very nice deal... low in calories - high in vitamin c... as well as potassium, antioxidants and lycopene, too - boo! plus - they're cute - so what's not to like?
for an easy-peasy roasted tomato sauce do this...
scatter 3 pints grape tomatoes with 3-4 cloves garlic, chopped in glass pan; toss with 2 tablespoons olive oil and sprinkle with some kosher salt and black pepper - keeping tomatoes in a single layer.... roast at 450 degrees F. for 30 - 40 minutes until very soft, stirring once. meanwhile, cook about 1 pound of pasta... when tomatoes are done - crush 'em with back of spoon... stir in 1/2 cup pasta cooking water - then toss with pasta for 8 servings...
