Roast butternut squash

Without wishing to get overly nostalgic about the lockdown, there was a nice period where we ate together every evening. And as Dan was pretty much vegetarian at the time, it was easy for me to cook for all three of us.

But then, as everything re-opened and the kids were back doing shifts and I was going down to Salford to college, it all became a bit disrupted.

So, one of the silver linings to Dan going off to university is that I can cook for me and Abi without worrying about whether Dan will want what I've made. I think she is rather looking forward to this.

To warm up, I promised her butternut squash risotto for dinner this evening after she got back from work. And I duly delivered!
