Tomatoes Ready for Roasting

I’m just about to put the last of our tomatoes into the oven for roasting. Our own wee harvest! I didn’t want to risk losing them as they were starting to split and go soft. We’ll have them over the next few days in salads, on toast, with spaghetti, you name it! Roasted with garlic, thyme, olive oil and balsamic vinegar. We’ve kept a couple to slice into a sandwich and a couple on the roof terrace are still ripening, and one plant has sprouted a new one and has a few wee flowers. An early year for our tomatoes, but a good one!
